Our facility contains both a production area and a segregated Deli shop.
Yes, our production floor is a nut-free facility. We are BRC (British Retail Consortium) Accredited and as such have a very rigorous Allergen Program in place to meet the Regulations under which we are certified. We make our breads, rolls, English muffins and muffins in our production facility. We do not contain any physical nuts in our production storage area. We have also gone to the extent to make sure that we source our ingredients from suppliers who do not contain nuts in their facility. Muffins (bran, apple cinnamon, blueberry, carrot and chocolate) made in our facility do not contain any nuts.
Our written Allergen Policy restricts the presence of tree nuts and peanuts from being within our facility. Not only does this policy cover our own ingredients, production lines and products, but this policy extends to our cross dock items, storage areas, transports, and employee lunches.
However, our physically separated Deli shop makes cookies using chocolate chips. Chocolate chips often come from a facility that process tree nuts and/or peanuts. Additionally, we sub-contract some of our desserts sold in the Deli store (nanimo bars, butter tarts, brownies). These products are made in a facility that also process tree nuts and/or peanuts. We also purchase a few finished products that come from facilities that handle nuts. Please note that these products are physically separated and do not cross-over our production area. Some of our sub contracted desserts and flatbreads (turnovers, Danishes, pita breads, naan breads, tortillas) come from a facility that uses nuts.
At Calgary Italian Bakery, we manufacture a number of unique items for our customers. Some of these items contain allergens. Items containing allergens may be run on the same processing equipment as non-allergen products. Please contact us to discuss any specific allergen concerns you may have.

The Monoglycerides and Diglycerides we use in our bakery are derived from plant sources.
We strive to support local businesses and source as many ingredients as we can locally. However, some ingredients are sourced domestically, and other ingredients are imported. Our products are labelled “Made in Canada from Domestic and Imported Ingredients”.
At Calgary Italian Bakery, we offer a large variety of products that are suitable for Vegan diets. Please contact us to discuss the options available to you.
We strive to support local businesses and source as many ingredients as we can locally. Our flour is purchased from a local milling company and the wheat we use is grown in Alberta. At this time, we do not import wheat from any European countries.
Unfortunately, products manufactured at our facility are not suitable for individuals diagnosed with Celiac Disease, Gluten Allergies and/or Gluten Sensitivities. However, we are a distributor for Care Bakery’s Gluten-free White Bread. Please contact us if you wish to purchase this item.
No, our CIBL white and whole wheat hamburger buns and hotdog buns do not contain eggs. However, please note that these products are made in a facility that contains the following allergens: wheat, eggs, milk, soy, sesame seeds, sulphites, and mustard.
We use food grade ink. At Calgary Italian Bakery, inks are used to impart lot codes and time stamps on our products for traceability purposes.
All Famiglia products are considered vegan friendly because they are not made with milk or egg. Though this is the case, we feel it’s important to be transparent with our customers and note that both of these ingredients are present in our facility.
We are certified to the highest global food safety certification, BRC Global Standards, and operate under a stringent food safety program. We have a separate, scheduled run for products containing milk and egg. We also have a dedicated sanitation team that cleans and sanitizes these lines after every allergen run. Our allergen program is also validated to ensure that no trace of egg or milk is present in Famiglia products.
Lecithin occurs naturally in a variety of biological materials, including humans. It’s a mixture of glycerophospholipids or more simply, a mixture of fatty acids, which is used to smooth food textures. It’s a crucial ingredient which acts as an emulsifier to help our bread develop its structure during proofing and aid in the slicing process.
Sunflower Lecithin is known to play an active role in lowering cholesterol, improving heart health, aiding breastfeeding mothers, helping improve digestion and cognitive function. To ensure these breads are friendly to those with soy allergies, we chose to use sunflower lecithin over soy lecithin.
We currently don’t make products with sprouted grain but it is something our partners have inspired us to work toward.
Famiglia is a clean label product using locally sourced, pronounceable ingredients. We have removed all the unwanted preservatives that are typically used to prolong shelf life. We have kept all breads in this line sugar free and low in sodium, with some being low fat, fat free and a source of fibre. We also believe that making healthy food choices shouldn’t be expensive, which is why we wanted to make sure Famiglia breads could fit within your shopping budget.
